I have been neglecting my Freedomnomnom posts. I’m cooking every day in keeping with my NOURISHMENT philosophy that FOOD is MEDICINE. Last night, I made duck breasts I ran across at Market Basket ($22 for 2), so I wanted to share, because I’ve always been intimidated by the idea, and I didn’t know how easy it is to make!
Basically: take out of fridge 30 minutes before using, score the fat, salt liberally on front and back, let it sit on the counter, pat dry, USE A COLD PAN, add duck fat or a little olive oil (I used oil), place the breasts SKIN SIDE DOWN and smear around pan, put on medium high (I used 4/6 electric), cook for 5-7 minutes depending on thickness, check fat has rendered and is golden brown, flip, 3 more minutes, then 60-90 seconds extra heat on the fatter end, remove, LET REST FOR 5 MINUTES. You are aiming for medium rare. Voila! I followed this guy’s recipe.
